Kanom Sai Sai, it would have been a pity if you hadn`t tasted it
I didn`t know how else to put it and it richly deserves its “rhyme”(in Romanian)
. It`s one of the best desserts I`ve ever tasted during my colored journeys! I`m not exaggerating for the sake of the sensational. If it`s properly made and if it doesn`t contain too much salt, it`s a delight.
It`s a 100% Thai traditional dessert, very-well known in Bangkok, it looks like a stuffed miniature donut, wrapped in banana tree leaf, with a super fresh coconut flavor.
Until we return to Thailand, I thought it was worth writing and sharing the recipe with you (for the skilled ones; if you are successful with it, please, tell me about it
)
At the beginning you need:
• 1 kilo of palm tree sugar
• 1,2 kilo of grated coconut
• 1/2 cup of water
• 3 cups of maltose syrup
They are all simmered, one at a time, until the mixture becomes low, they are left aside to get cold and then one and a half centimeter tiny balls are being made.
Then: 2 cups of sticky black rice flour and 2 cups of white rice flour, one half cup of water are mixed together and tiny balls are then being made.
The third step is the topping:
• 2 cups and 6 teaspoonful of rice flour
• 3-4 teaspoonful of salt and sugar
• 8 little cups of thick coconut cream
• 4 cups of coconut milk
All are mixed in a pan; the first tiny balls are put in the middle of a banana tree leaf, then the other ones and finally the topping, a little triangle is made of the leaf, it is cooked in steam for 10 minutes and here it is.
Eh, how does it sound?
Extra-tip: it`s a super idea for the wedding candy-bar (Thai people use it very often at the wedding ceremonies)
